Location
South-east of Montalcino, near Castelnuovo dell’Abate, between Montalcino and Monte Amiata, in the Val d’Orcia. South-facing over the valley of the Ribusuoli river. Height above sea level 400-450 metres.
Micro Climate
Sun all day due to its south-facing slopes. An almost constant southern breeze coming from Monte Amiata maintains a fresh and healthy climate where the need for fungicide spray is reduced.
Soil
Texture from sandy-loam to clay-loam with rich scheleton .Areas of galestro and red earth.. Well drained soil with good water permeability and good water retention. Satisfactory natural presence of the essential nutrients for the vine and thus allowing for minimal use of fertilizers.
South facing 22 percent slope.
Certified organic production according to the EU 2092/91 norms.
Agricultural tecniques adhere to principles of permaculture and biodynamic agriculture:
the maintenance and increase of biodiversity
the introduction of new plants (wild and agricultural germoplasm) to create a balanced self-sustaining habitat around the vine and working in synergy with the vine
subtle interventions to shift the biological equilibrium of the vineyard ecosystem in an agricultural sense to enhance the production of healthy grapes with high yet balanced gradations of sugars, acids and polyphenols.
Fertilization
Compost is obtained by composting cow manure taken from another organic farm together with organic and inorganic substances from the estate. As from this year compost will be innoculated with biodynamic preparations.
Fungicide Sprays
Sulphur , Copper 0,7 Kg per year per hecatare, Potassium Silicate
Winemaking Techniques
Winemaking follows the norms of the AIAB (Associazione Italiana Agricoltura Biologica) for organic winemaking.
Slavonia oak vats, stainless steel ISO A316 and barriques Vernou and Radoux are employed. Operations of delestage and batonage are performed. Wine making and wine stocking under temperature control. Nitrogen is used to pump the wines and to protect them from oxidation.
No additives are used apart from minimal quantities of Sulphur Dioxide (30 to 40 mg per liter of Total Sulphur Dioxide)
